Fruit Cocktail Bake / Pudding / Cake / Pie

 

Set oven to 180°C or 350°F

 

Measure into a bowl:

                                    2 Cups Self Raising flour – Sifted

                                    1 Cup Sugar

                                    2 Eggs

                                    2 Level Teaspoons Bicarbonate of Soda

                                    2 x 410g Fruit Cocktail Juice and all

 

Put into sprayed large bowl and bake for 30 minutes or until done. But 15 minutes before this comes out make the sauce.

 

Boil on stove for 15 minutes:

                                    1 Cup Sugar

                                    ½ Cup Coconut

                                    4 Heaped tablespoons of butter or margarine

                                    ¾ Cup Milk

                                    1 teaspoon vanilla essence

 

Pour this over the hot pudding as it comes out of the oven, pricking it all over and loosening the sides.

 

Let cool. Serve with whipped cream / custard / ice cream or all of the above.

 

PS:

In Oz they don’t have fruit cocktail; I use a can of “Golden Circle 825g Chunky fruit salad in natural juice”

I use vanilla extract in stead of vanilla essence to make it a bit more special
